Apple Chili

A tasty way to incorporate the bean with the most antioxidants (The Best Bean) and the apple highest in antioxidants; at least it was until this newest study.  The Healthiest Apple

Plants

  • 3 cups cooked^ black beans
  • 2 large organic* red delicious apples, chopped
  • 4 medium tomatoes, chopped or jar of strained tomatoes
  • 2 small red onions, chopped
  • 4 cloves garlic, minced
  • ½ cup water/homemade vegetable broth
  • 1-2 tbsp chili powder
  • 1 tsp oregano
  • 1 tbsp cinnamon
  • ½ tsp cayenne pepper
  • black pepper

Technique

In a large pot, sauté onion and garlic in a splash of water/broth until onions translucent, about 5-10 minutes. Add remainder of ingredients, bring to a boil, then lower heat and cook until apples thoroughly cooked. Season to taste with black pepper.

If you own a pressure cooker use 1 cup dry black beans (rinsed and sorted). Add all ingredients to pressure cooker and cook for approximately 15 minutes. Season to taste with black pepper.

^If using canned beans select those packaged without salt added and in BPA-free cans such as Eden Organic brand.  BPA Plastic and Male Sexual Dysfunction
